My mother used to make a delicious meat loaf for us – with a hard boiled egg at the centre. When Pina’s mother decided to make Polpettone it was like going back to my childhood too.
The added bonus is that Pina’s mum’s meat loaf has the goodness of grated carrots! How can something that tastes so good be healthy too? Try it…it’s easy, it keeps well in the fridge – and it’s delightful!
Ingredients
- Ground beef: 1.2kg
- 4 eggs
- Tomato Sauce (pre-cooked) 5 tablespoons
- Breadcrumbs: 5 tablespoons
- Any hard grated cheese (parmesan): 5 tablespoons
- Salt 1 tablespoon
- A pinch of black pepper
- Parsley – 1 small bunch. Chopped
- Ham – 10 slices to cover the meat layer
- Mozzarella cheese – 2×125 gm
- Grated carrots – 2 cups
Instructions
- Mix the beef, eggs, sauce, crumbs, cheese, salt, parsley together in a bowl
- Spread the meat mix over a layer of cling plastic wrap to form a rectangle of even thickness.
- Break mozzarella into pieces and spread it over the meat mix.
- Spread the grated carrots over the layer of mozzarella and meat.
- Arange the ham slices over the layer of carrots, mozzarella and meat.
- Tightly roll using the cling wrap (like a swiss roll).
- In a baking dish, add coarsely chopped white onions, some olive oil, basil leaves, salt, tomato sauce and turn over the meatloaf on to the dish.
- Arrange it neatly and decorate it into a rabbit, pineapple or any other shape.
- Spread some tomato sauce on it.
- Preheat the oven at 180 degrees for 10 mins and cook it for an hour or until done
- Cut meatloaf into slices and serve with its juices and crusty bread

glad u liked it…yes, you can make a large one and keep it in the fridge. it’s delicious on it’s own, with bread, as a meal with a salad….
you can eat it cold or warm and it looks great on a table too!
