Nevena is so outrageous that when you first meet her you are not sure whether to take what she says with a sack of salt…so when she first said she is going to bake aphrodisiac pies for a party I imagined a large cauldron smoking with all kinds of stuff thrown in….
Then she tied her scarf in her inimitable gypsy style to cover her faux blonde locks and baked these wonderful pies – and we knew they were for real! And Nevena is for real!
Ingredients
- 1/2 kg of chicken liver and heart
- 3 sprigs of leek
- 4 large onions
- 4 eggs
- 4 cardomoms
- Salt
- 1 teaspoon black pepper – coarsely ground
- 1 teaspoon white pepper – coarsely ground
- 1 teaspoon cumin – coarsely ground
- 1 small cup olive oil
- 1/2 kg plain (wholemeal) flour
- 1 teaspoon baking powder
- 1 can soda water
- 1 shot of cognac
- 4 tablespoons yogurt
- Pumpkin seeds
Instructions
- Heat a skillet. Add extra virgin olive oil (without heating it too much). Add onions and leek and cook it for a few minutes
- Add chopped liver and heart and spices and fry together for another 10 minutes till the water dries up
- Remove from the flame and keep aside
- In a mixing bowl add the flour, eggs, baking powder, salt, pepper and cumin
- Add a shot of cognac
- Add soda water bit by bit till the dough is soft
- Add the onion-leek-liver mix into the same dough that was prepared in the first recipe – retaining 2 cups of it mix for the thrid dish
- Scoop the mix into muffin trays. Sprinkle pumpkin seeds on the top and bake for 20 minutes or till brown on the top. Test with a fork or toothpick by poking the pie in the centre to ensure it’s not sticky.
